Roasted Vegetables

Okay, so I know this sounds like a simple one but it definitely comes in handy. This recipe is great for vegetarians and veggie lovers, alike.

Ingredients:

Olive Oil (Extra Virgin if possible)

Vegetables of your choosing (Cabbage, Green Beans Okra, Squash, Etc.)

Salt

Pepper

Additional seasonings of your choice

Optional: Balsamic Vinegar or Lemon Juice

Directions:

1. Preheat oven to 375°.

2. Cut the desired veggies and assemble on a sheet pan. Remember that you want to make slices a bit larger than normal. Cabbage steaks are wonderful. 

3. Drizzle oil over the veggies. You can be a tad more generous with the oil. This is to ensure that the char is not too heavy on the vegetables. Toss. 

4. Now season. With my access to local produce, I like to keep things simple. Salt and pepper work just fine. If you want to add fresh herbs or a touch of spice, go for it. Just remember that the oven temperature will be a bit hotter, so some of the more delicate herbs can burn. 

5. Place in the preheated oven and roast to desired tenderness. I would definitely check around 8-10 minutes.

6. Once the vegetables are out of the oven, you can serve immediately. Add a drizzle of balsamic vinegar or a squeeze of fresh lemon for added complexity.
